Vegan Cajun Okra Stew
Here's a simple cajun veggie recipe you can have whipped up in less than an hour.
Canned beans and peas are fine, but the okra has got to be fresh!
Ingredients:
6-7 fresh large tomatoes
1 can lima beans
1 can blackeye peas
1 cup fresh chopped okra
1 onion, chopped
2-3 cloves garlic, chopped
1 tablespoon cajun seasoning
pepper and salt to taste
1-2 teaspoon olive oil
Directions:
Heat olive oil in a large stew pot.
Add chopped onions and garlic.
Saute for 2-3 minutes.
Add chopped tomatoes, lima beans, blackeye peas and cajun seasoning.
Bring to a boil, stir well, then reduce heat and simmer on low for 30 minutes, stirring occasionally.
Thin with water as needed.
Add chopped okra, stir well.
Simmer for about 15 minutes.
Serve over brown rice.
