Creole-Cajun Turnip Greens
Ingredients:
2 bunches fresh turnip greens
1/2 pound ham, bacon or pork
1 medium sized onion, minced
1 tablespoon lard
salt and pepper to taste
plenty of Tabasco sauce
Method:
Wash the greens until all grit is out (or you'll wear out your teeth).
Put the meat in a pan with the onion and lard (the low-fat kind).
Let fry 5 minutes, then add 2 cups water and add the greens.
Boil for another 15 minutes.
Salt and pepper to taste and a dash of Tabasco sauce.
Stephan sez, You can ya-ya this up by adding chopped white onion and crushed red peppers to the greens while they boil
