Cajun Cornbread

(by request)

Stephan sez, OK to substitute ground beef,
and toss in some chopped celery!

Ingredients:

1 lb. crawfish, chopped
2 cups cheddar cheese, shredded
1 stick margarine, softened
1 tbsp. salt
1 15-oz. can creamed corn
1 small onion, chopped
1 small bell pepper, chopped
2 jalapeƱo peppers, chopped
3 eggs
1 tsp. baking soda
1 tbsp. Creole seasoning
1 bunch green onions, chopped
1 8 1/2-oz. package cornbread mix

Method:

Just mix all ingredients well in a large bowl.
Pour into a greased pan.
Bake at 350 degrees for 45 minutes.
